Hi Casey! Thank you for your feedback. The smoke production is indeed intermittent on our grills. When you cook foods, the temp is always higher so no obvious smoke, but you can see the small rings on the meat which indicates that Z Grills produces smoke. The lower the temperature, the more smoke, for example, when setting it at 225, you will see less smoke, and at 300 will be no smoke. For most Zgrills owners, they suggested leaving it on the smoke setting for an hour or so before going up to 225°, it added more flavor and a well defined smoke ring.  Big difference in leaving it on smoke for longer.
