The Hatori knife sharpener is really good. After using the Diamond side of the roller, it shaved off all the old dull edge from my current kitchen knife. Using the smooth side refined the edge. I've yet to learn how to use the strop. The Japanese knife I ordered is really sharp too. Overall a good product.

Hi Pyramid, Thank you for the detailed review. It's great to hear the diamond side cleared away the dull edge and the smooth side brought it back, that's exactly how the roller is meant to work.
