The COOC does not require a bottling date. Ensure that you are within your state and federal regulations but, in terms of the COOC, It's not a requirements. "The Council’s Extra Virgin Seal Certification Program was established to guarantee that oil bearing the seal was of extra virgin quality. Knowing that this oil would be for sale during the new year, the COOC prints the “sell” year onto the Seal instead of the harvest year. The COOC seal informs consumers that the oil they are purchasing is for use during the year displayed on the seal." We do however, require the harvest date to be posted on the bottle as COOC certify oils per harvest. Luckily, we consider the Harvest Seal as a form of posting the harvest date on your packaging.
