Hi Joni, I think you might have us confused with someone else. You only placed one order with us for a Magnetic Knife Stand which was delivered with USPS. No other order, for knives or otherwise, can be found under your name, address, email or phone number. I have also checked customer service communication records and there are no records under your details or order number. I'm quite surprised with your comments as we have thousands of satisfied customers, amongst them professional chefs, using our knives and the feedback has been overwhelmingly positive. The knives are also tested independently for quality. Possibly, your husband is used to softer steel which is easier to maintain, but everyone should use what they're most comfortable with. Hi Rick, The handles are made from real wood, by hand using a natural finish. Different parts of wood have different grain patterns and absorb the finish differently. Other factors such as the age of the wood or the humidity also affect how the wood finishes. We cannot guarantee all the handles come out the exact same color and it has nothing to do with shipping dates, which are prominently shown prior to checkout and in all order confirmation emails. If you are not happy with our products, I'd like to apologize and remind you that you may return any item for a full refund. Thank you, Knives Et Cetera
