Thank you, Rusty. The skepticism was warranted. Plenty of people sell websites to small businesses and then go quiet, and you asked hard questions before you signed anything. You should have. On the part you said you don't understand — you shouldn't have to, but here's what it is. Your site is built so Google, Bing, and the AI assistants can all read it properly, it's backed up weekly, and someone checks every month whether it's actually working.
